Unbaked Easter Fudge (no cocoa)
This uncooked slice is great because it's simple enough for even the youngest budding cook to have a go! Similar to a chocolate fudge slice but I have substituted organic carob powder instead of cocoa and I've added walnuts (just like my Nanna used to make) :)
See below for ingredients for this "Special Easter Treat"
BASE:
100g butter
HALF a 395g can sweetened condensed milk
1 tsp vanilla essence
1/4 cup Carob Powder
3/4 cup desiccated coconut
1 packet wine or malt biscuits
1/2 cup chopped sultanas
1/3 cup chopped walnuts
ICING:
3/4 cup icing sugar
1/4 cup carob powder (sifted)
2 tsp butter
1/2 tsp vanilla essence
Enough boiling water to melt butter (approx 2 Tablespoons)
DECORATE:
Peanut Butter mini Easter Eggs (chopped) - or sprinkles
PROCESS:
Line a 18x28cm(approx) dish with baking paper.
Warm butter in a medium-sized pot or microwave dish until melted.
Remove from heat and stir in condensed milk and essence.
Add the carob powder (sifted) and coconut, stir well until combined.
Break biscuits up in a double-layered bag using a rolling pin until crumbed, then stir them into the bowl or pot along with the sultanas and walnuts.
Press mixture firmly into the lined dish and level the top.
Ice with carob icing and decorate with chopped peanut butter Easter Eggs (or sprinkles)
Refrigerate until firm, cut into slices - Enjoy!
