A little indulgence, done the right way
There’s something special about celebrating milestones, and for my launch event I wanted to make something home-made, comforting, and still aligned with a healthy lifestyle. This carrot cake is exactly that — a treat you can enjoy without feeling like you’ve completely gone off track.
I always say to my clients that results don’t come from perfection, they come from consistency. And part of that consistency is learning how to include the things you enjoy in a balanced way. You don’t have to cut everything out to feel good, get strong, or reach your goals.
This carrot cake is a great example. It’s made with simple, wholesome ingredients, lower in processed sugars than traditional recipes, and still tastes just as good as something far more indulgent. It’s perfect for a celebration, a shared moment with friends or family, or just when you feel like baking something nourishing and delicious.
Because enjoying food should never come with guilt — it should be part of your lifestyle.
Ingredients
2 Eggs
2/3 Cup Brown Sugar
1/2 Cup Light Olive Oil
1 Teaspoon Vanilla Essence
1 1/2 Cups Wholemeal Flour
2 Teaspoons Mixed Spice
2 Teaspoons Cinnamon
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
2 Tablespoons Crushed Unsweetened Pineapple
2 Cups Grated Carrot
1/3 Cup Chopped Walnuts
1/4 Cup Chopped Dates (optional)
Instructions:
Combine eggs, sugar, oil & vanilla and mix well.
Add sifted dry ingredients with carrots, pineapple, nuts & dates. Mix well.
Spoon into lined cake tin - bake 160 deg for approx 45-50 min.
Alternatively, you can spoon into microwave ring container & cook elevated on high for 11 minutes.
